On the other hand Koei Tecmos president has openly said he would love to do a Star Wars Musou game and I honestly really love that idea.
I would also be interested what Bungie could do with a Star Wars FPS.

Disney has never been the greatest when it came to trying to get into video games. Its one of the mediums they've never quite conquered.
Like, they have Kingdom Hearts... which they seemingly barely care about. Everything else has been licensed out to studios with a variety of results from surprisingly good (Mostly the Star Wars games) to basic shovelware.
Their approach is probably "What studios/developers/publishers have the best selling games of the last year? Let's contact them!"
So, Quantic Dream made headlines with Detroit. Ubisoft has always sold well. EA has a lot of studios under their belt and, with their constant purchase of new studios and other questionable practices, they're kinda the Disney of the video game world... Of course Disney would turn to those studios.
They pay attention to profits, not reputation.
Of course if Quantic Dream can’t deliver I imagine they’ll take the project away and give I to another studio.

Not necessarily, Saber Interactive did the Halo remakes for the Master Chief collection and with the exception of Halo 1 Anniversary they've all gotten very positive reception.
If nothing else they have a history of successfully remaking games.

They've got a rather long-list of games many of which aren't too impressive, it's understandable that the remakes would fall under the radar.

Those Halo titles they worked on IIRC used the exact same game engine as the original with the only changes being graphical updates (higher-poly models, higher-res textures, improved lighting, etc) and a new soundtrack. Halo 2 Anniversary got remastered cutscenes but those were outsourced to Blur Studios.
Not saying there's no hope of a new combat system and reimagined levels and whatnot but based on their portfolio I think it's quite possible that we're just gonna get a graphics and art design upgrade and some new music.

Yeah when I did some reading up on what Quantic Dreams did to earn such a rep, since I only know them for Heavy Rain, it's really shitty what David Cage did.
And the awful working environment certainly shrank their talent pool.
Not sure if you were there, but when it was leaked that a Quantic Dreams made Star Wars game was in the works, the thread here on this site actually dismissed it out of hand because "surely Disney knows how awful Quantic Dreams is and wouldn't let them near the brand ".
We gave them too much credit.
