You're right on the uninspired characters thing, though this may be intentional, as the story sets up stock characters in order to tear them down. YMMV on how well it works.
The first one in the game is still my favorite, to be honest, as Shadow Yosuke absolutely ravages Yosuke for being an amoral thrillseeker beneath his facade of a happy-go-lucky comic-relief character.

It is mostly Jpop but yes the music is god tier, P3 and P4 have the best soundtracks in gaming. P5 has a Jazz soundtrack that looks good but I haven't listened to much yet.
As for fast friends umm only Yosuke, everyone else it's more circumstances brings them in and friends come later. Even Chie is more using Yu to get to Yukiko.
And yeah Margaret is explaining something that is a game mechanic. Short hand is each friend Yu gets is represented by a Tarot arcana, like Chie is the Chariot. Each friendship in the anime gives him access to one new persona of that arcana to kick ass with.
The anime doesn't really explain much on how personas work though and they work very differently than in the games. The anime sadly take a New Powers as the Plot Demands way to get around game mechanics.
