• The reason Jaime Lannister survives despite his diminished fighting ability is because the wights don't have much ability for fancy swordplay either.

• Why did everybody assume the crypt would be safe? Because on all other occasions, Night King only raised people killed by him or his wights. They probably assumed that those dead from other causes can't be raised.
  • Unlikely they wouldn't know that. The wildlings have a long-standing tradition of burning the dead to prevent them being raised.
