The word "NORMAL" in the battle screen is a placeholder for Undergarf's Status Effects unrelated to SOUL color or difficulty level.
Regardless of this game's difficulty level or whether or not Nermal's SOUL is turned blue, the word on the right side of the bar above the action buttons will always be "NORMAL". Thus, it could be used to label temporary Status Buffs and/or ailments (which the player can get in the canon Undertale).
