She couldn't win her dad over with her accomplishments so she took drastic measures. The evidence that follows.
* Toph is the first onscreen Metal Bender. So manipulating iron to be unstable would be child's play to her.
* It wouldn't be the first time a member of the Gaang did questionable out of character things:
*** Aang lying too the warring groups in "The Great Divide"
*** Katara bloodbending the man that killed her mother, after she vowed never to bloodbend again.
*** Zuko switching sides after being an established good guy.
With Toph being the only one on and offscreen not using her techniques even the ones she invented for questionable purposes. Much like her life changing adventure with Zuko, she's the last to do so.
