It would be nice to see Negima get a proper adaptation. Too late for that, however.
I'd probably exclude everything that's had a Word of God Grand Finale, because if the original creator is out of ideas it's probably better to let the series rest. On the other hand, series based on ongoing original works should be as ongoing as those originals.

A three-season remake of Higurashi that stretches the story out properly, giving them time to fill the details. Not counting Rei, it was 50 episodes long, while it should've been closer to the 70+ of anime like Monster and Hikaru no Go.

Besides, it pisses me off that we could have had the Musk Dynasty arc as an OAV, and they freaking chose to OAV the Ryugenzawa arc. I mean, seriously, mutiple Crowning Moments Of Awesome and the baddest opponents Ranma would ever face up until Saffron, contrasted to a few Crowning Moments Of Awesome and a whole buttload of Ship Tease, and they chose the latter?!
Besides Ranma, I'd have to agree with a third season for The Big O - I mean, come on, it's made for a final season!
Sasameki Koto - great Adaptation Expansion, but it only adapted the first two volumes(less than a quarter of the series) and had a less than conclusive ending.
