Honestly, I think there was a bit more strategy than you might think.
The Knight simply hammered away at her, and had no real point behind its blows except for them to land.
Weiss, on the other hand, took advantage of the machines slow attacking and moving speed to outmaneuver it and compensate for her comparatively weaker strikes.
Her first few attempts at the knight were probably quite miserable, until she of course learned how to move fast enough to avoid it.
Also, can you honestly say you would be able to keep track of everything going on if you were looking form the perspective of Weiss? She had to know exactly when to use dust, when to time her strikes, when to dodge and then strike, timing her spins on Myrtenaster exactly so they landed at the correct function, and did all of this while moving in 3D Space (Horizontal, vertical, and across the Z axis), while only missing a beat once. She did all of this without the blessing of a 3rd person perspective.
Normal people can't do that. Hell, most people trained for military can't do that. You have to have an extremely high intellect to consistently think in 3 dimensions while moving at high velocities.
