It's not like he doesn't know that. Dude takes one look at each of them and discerns their ideologies. Looks at Shirou and tells him exactly what kind of magic he's working on and how many swords he's making at the same time. I don't see how Emiya's true identity could have possibly escaped him.

No matter what, nothing changes the fact he got his ass-kicked by a human who barely got any major powers in until just recently.
I don't care the excuses, I don't care the justifications, the moment Gilgamesh lost an arm to Shirou of all people & never to Lancelot, Iskandar, Artoria, Cu, Hercules, etc. cemented him as a laughingstock.
His loss at Shirou is a permanent disgrace, one that can never be fixed or payed back.

Indeed everyone is garbage.
When a mere human is able to beat what is supposably the strongest being in existence, all respect is lost.
The greatest warriors in all history tried to defeat Gil & they all failed handily. Using his own weapons against him, fighter jets, massive armies, Excalibur, Gay Bulge, Hercules, etc all failed absolutely & yet Shirou prevailed.
This whole thing is a farce. 
I just now realized Gilgamesh was able to maneuver his giant Indian airship in a complex dogfight without having the Riding Skill.

Given that the Holy Grail can't summon gods and Gilgamesh is a god in his myth, we can assume he's been nerfed significantly. Couple that with Servants being clones and not the originals and Shirou beating Gilgamesh isn't a stain on his character.

He also gets the best feat against Kiara considering how she's the strongest against him, followed by the girls, and Archer being the one most resistant because he's just that dumb.

Divinity seems to be a sliding scale and isn't totally based on rank in the skill either. Like Karna recognizes that Tamamo is way closer to a divine spirit than he is. But anyway, neither Gil nor Karna are considered Divine Spirits.

Divinity is such a silly skill. I am pretty sure it has more disadvantages than advantages.

The divinity skill in and of itself isn't said to do anything except in Karna's case where it gives him defense against fire and some authority over other sun based demigods. The point is that Servants with divinity happen to have stronger abilities thanks to divine blood.
I think all the drawbacks against Divinity is to give powerful Servants a weak spot or two.
Servants with Divinity generally tend to be the strongest in the franchise, after all: Karna, Gilgamesh, Herakles, Rama, Sanzang, Iskandar, and so on and so forth.
Sanzang isn't really that strong aside from her power to go Buddha, and that's a suicide move.
She can keep up with the likes of Lancelot in a physycal fight, that's plenty strong.
Remember, Casters are generally weaker than the Knight classes. So Sanzang measuring up to one of Saber's finest still puts her well above what you'd normally expect out of the Caster class, if not necessarely out of Servants in general.
I think that was middly retconned in the UBW anime as the armour no longer existing thanks to the mud shower Gil got at the end of Fate/Zero.
Instead of focusing on relatives that divide us, maybe we should try to find the absolutes that tie us.
