True, but they went straight into the story without even doing the tutorial, so they're missing how to do super moves and stuff.

Would the gameplay be much more interesting if they actually knew what they were doing? So far it's been pretty dull
Not really no.
Ultimate Tenkaichi is just an inherently boring game. The only fun in Ultimate Tenkaichi is in the schadenfreude of watching others have to play it.
Well getting better means they're less likely to get stuck
And while UT is not a great game, it's certainly not agonizing. It can be a very cinematic experience with the supers and pursuit chains.
Not terribly different to Spike's other games frankly.
Also, it's better complaining about a game if you know how to play it than blaming it on your own incompetent

...The problem is that even those moments are few and far between, and them sucking so bad works out to be more frustrating than not, on average.
Yeah, their Soulsborne playthroughs were pretty great largely because you expect people to die a lot and everyone drinking made it even funnier. It also made those moments of sheer badassery like Kirran killing two bosses in one life or Lani achieving what we now know as Ultra Instinct -Omen- and obliterating the Shadows fo Yarhnam despite not having seen the second and third phase even better. I was on the edge of my seat for those and cheered like a madman when "PREY SLAUGHTERED" appeared on the screen.
But then you have them failing constantly on things that are really simple and the game was very obvious about and that's endlessly frustrating.

Yeah, if the game is good, then they will put in the effort to get good at it. But if a game is bad, then it isn’t worth the effort of being good at it.
They grind, have a rematch against Zarbon, grind and try to face the two bosses only to get stomped
So there's gonna be a lot of grinding

Luckily enough it's not near crippling to the point it causes you to lose the fight, at least it doesn't look like it

I know there's Golden Great Ape Baby, and Ultimate Shenron is the final boss (neat idea for a Dragon Ball final boss, by the way, just fighting one of the wish dragons). I feel like I remember seeing Lani fight Hirudegarn and Wire Metal Cooler, but I'm not sure on that.
I don't know why games never use Janemba's first form as a giant boss, is it just because Super Janemba is stronger, more marketable, and human-sized? Because they could easily just make Super Janemba a more difficult boss than giant Janemba was.
Dragon Ball fighting games are notorious for some of their bullshit.
The Raging Blast games liked to have certain missions that start you at 1 HP. Awkwardly, they did not use this the way you might expect.
You might see that and go, "Oh, so like, Tenshinhan versus Cell would be a 1 HP fight. Cell's so powerful that he can waste Tenshinhan in a single hit. That makes sense."
No. That is not what that means.
Their logic was instead things like, "Frieza versus Krillin should be a 1 HP fight. Frieza so thoroughly surpasses Krillin that even letting Krillin touch you once is a failure to adequately represent the character of Frieza in this fight."
The idea was to make you feel powerful by forcing you to play a perfect match. It frequently had the opposite effect, however, because being killed by Krillin in one hit does not make you feel powerful.
