I get the sneaking suspicion the game has issues that no one wants to talk about. When the game was announced it's likely that it was just in a really early state, since there was only a teaser and no actual gameplay footage. I think people are worried this is going to become another Scalebound, though, when everyone involved insists things are fine and then it turns out no, they weren't fine, they were never fine, and the game people were hyped up for is cancelled.
It's just not Nintendo's way to announce a game and then just say nothing about it when things are going well, either. Look at how they talk about Metroid Prime 4 and Breath of the Wild 2, for example. If there's no new news they're very clear that there's just nothing new to show, but development is going smoothly (though Prime 4 was an unusual case because Nintendo was also transparent with Namco Bandai shitting the bed with it and the game needing to be completely restarted). Bayo 3's just been totally silent, which does not bode well.
It was probably a mistake to announce so early.

I get the feeling Nintendo probably wants to wait till a couple months before release before properly revealing it.
It worked for Metroid. Twice.
The "Surprise! The game's right around the corner!" Release strategy is becoming more and more common.
It definitely feels like Nintendo realized they made a mistake on announcing both Bayo 3 and Metroid Prime 4 far too early.
At the same time, I think they may have over corrected with Bayo 3, because the lack of ANYTHING since December 2017 makes the wait between the announcement of KH 3 back in 2013 and the first gameplay in 2015 seem like a small wait by comparison.
This is almost the same length of time it took for something from the FFVII Remake to be fully unveiled. Its kinda ridiculous.

Apparently Platinum does want to show off Bayo-3 but Nintendo is preventing them from doing so for whatever reason.
