** Part of it may also be that this is the first time in a while they are all together again, similar to the wake idea. While there is some distance between certain members due to what's happened, sometimes being around certain people just unconsciously brings out that side of you if you aren't aware of it (like when adult siblings get together, they sometimes regress to old family patterns). So the friends being around each other brings out that old pranking behavior, which they don't keep in check since they aren't the most introspective bunch. Might also add to why they didn't understand that the prank on Hannah was particularly cruel. On top of not knowing how deep her feelings for Mike were, the friends seemed to prank each other all the time with no harm, no foul before this point. The only one who really understood the emotional impact the prank would have on Hannah was Sam, who is Hannah's best friend.

** There was a Halloween livestream with the developers (Tom Heaton and Jez Harris) in 2018 during which they mentioned that one of the girls was going to be pregnant in the original story, but they didn't state which. They also specifically say that Emily was not cheating on Matt, even though he can force a confession out of her on the firetower. I think if Emily was intended to be pregnant with Mike's baby it really makes a lot of pieces fall into place. They'd be keeping it from their respective significant others to not blow everything up, but still having to sneak around to figure out what they're going to do about it; stuff that might look like cheating from the outside even if it isn't. It also would explain why through the binoculars it looks like Emily is freaking out and Mike is calming her down.

** It seems to be a ritualistic trigger, you eat human flesh on that specific mountain, it gives the Wendigo spirit license to possess you, it is also heavily implied that the Wendigos can influence people who are, as you say, under duress, to crave human flesh and want to consume it, and it is implied the worse state your mind is, the easier it is for the Wendigos' to influence you, look at the true ending, Josh was in the mine for what? a few days (I say that because, thanks to the group, now the authorities ''knew'' where to look) and already sharpened up and happily snacking on stranger scalp, his mental state was obviously bad, and seeing what his sister had became might of unhinged him further, so he would've been prime Wendigo meatsuit material.
