But, considering how magic seemingly functions on [[ExactWords precise wording]], wouldn't the deal be off after Feyre gets her neck snapped? She does get resurrected, but she was definitely dead for a little while, and seeing as she made the deal prior to her resurrection, would it still count?

Amarantha clearly enjoys torturing people physically and psychologically, which the tasks are definitely designed to do for Feyre and others. She may also hope it will persuade Tamlin to submit to her to save his lover. And because [[VillainBall the plot needs to continue]], as it would be a bit of a downer if Amarantha was a NoNonsenseNemesis and just killed the heroine.
