I think I'd just have unlimited stocks of everything found in stores once you beat end game
That way the game keeps balance up until you beat it.

Unless you're doing a captured units only run(and even then a random Adventure might be better), she's pretty meh for an Adventurer. Dunno how she compares to Funke though.
I've got pretty decent-to-good luck on what resources I get. My first Conquest playthrough gave me a Milk resource and everybody in Conquest appreciates a Speed boost. My first Birthright playthrough gave me Rice and everybody except Orochi (who I'm using) could use a Defense boost.
In terms of gems, I got Rubies for Conquest which wasn't really the best for me because my only competent lance user was Peri. For Birthright I got Amber which would normally be really trash if I didn't use Hayato or Orochi (you wouldn't in an efficiency playthrough), but I used Orochi, Oni Chieftain Rinkah who is a pretty solid magic attacker, and Dark Falcon Hinoka whose Magic is almost as good as her STR.
Funke can reclass. Candace can't. Because of her unique model she's permanently stuck as an Adventurer. Ergo, Funke is automatically better than her

That's kinda funny because I basically had the opposite. Useless Cabbages for my blind Conquest run, paired up with marginally useful Crystals (I technically had sword users, but, uh... well, Selena was a backpack for a good while and Silas was using lances). For Birthright, I've had Beans when Rice probably would have been much preferred. Granted, I haven't used the Mess Hall at all on this run. Got Lapis for the gem, which was decent enough for my Corrin because I took a Wyvern talent, so he appreciated the forged clubs. Unfortunately, axes aren't exactly a common weapon proficiency for the rest of Hoshido...

I'm confused by the fact that when I checked, Scarlet still has supports with Corrin in Revelations, even though she gets rekt the very next Chapter.
Would it be possible for someone to grind with her in challenges and DLC, marry her, get Kanna, and then watch her bite the dust?

IceAnt: I ended up benching Scarlet, but she's so powerful that I don't think she really needs a forge. I have been using Rinkah, since I'm using almost all the non-pre-promo gen 1s (Hayato got cut because he was the extra bachelor), but she's been pretty bad. Had a really strong start and then something like six poor levels when her durability was already kind of shaky. So she's mostly just been a stat backpack for Ryoma (and ended up shipped with him as a result).

Every time I try to Dual Attack the boss using Kiragi + Selkie, the game goes "no, fuck you" and the boss dodges both attacks (which are each +70% to hit). I thought it might be an RNG thing and have been waiting turns and doing different inputs on every reset, but he's still dodging.

You've all probably heard this already, but I thought that the final boss of Lyn's chapter had to be finished off by Lyn, simply because he was dodging all the attacks that should have killed him until I sent in Lyn.

Ninety: If that's what it was really about (becoming overpowered part; can't argue the shipping point), then the devs really would have removed the limits on items stocks. Since they didn't, it's pretty clear they were trying to keep some level of balance in there. They set out a certain baseline experience and people are free to break it via grinding and DLC if they wish, but that's as far as it goes.
EDIT: Sapphire: In Conquest, some enemies have either absurd skill configurations (Haitaka, Rallyman) or very specific skill sets (Pass on Falcon Knights) that can open up new, non-meat-shielding strats for people.
