hashtagsarestupidI dunno about you, but I've seen plenty of people's reactions to racial humor less often being "Isn't this ridiculous!?", but more often "LOL BLACK PEOPLE" or something along those lines.
It's like how people will sometimes start off a sentence by saying "I'M NOT A RACIST, BUUUUT..." and then go on and prove themselves to be awfully racist.
Sometimes though it can be a thin line between mocking an awful stereotype vs just wallowing in it. I get the intent, but sometimes it can come across as desperately trying to provoke for a cheap laugh is all. I remember reading that part of why Dave Chappelle ended his show was when he saw a white crew member laughing his head off during a taping and wondering if all that guy was getting out of it was Uncle Tomfoolery and not the satire that was intended. So yeah, I get that it's complicated and not everyone has bad intentions but it's worth at least examining. And no, I don't think something being a joke is some sort of magical shield that exempts it from having any consequence or meaning whatsoever, in fact that viewpoint bugs me just as someone who fucking loves comedy!

Also yeah, I honestly think comedy is harder than drama. That's why I don't get why some critics don't take it seriously.

Well, when you're discussing a slur and trying to point out why it's bad to use it, it seems self defeating to censor it. If you act afraid of a word like that, you're giving it way too much power in the context of discussing the word itself.
Plus it looks kind of juvenile to censor words in such a way that you can tell what it is anyhow.
Typically there are two (three) reasons to censor words in such a way that you can still tell what it is. The first is to get it past a censor that does not allow swearing, so this lets adults know what is being said while kids or incredibly naive people still remain innocent.
However, I'm pretty sure the reason why this blog censors the slur, is because the person using the word is uncomfortable with it. But I don't think that really helps matters at all and is kind of a stupid reason to do it.
(the third reason is a religious reason which doesn't really factor into any of this)
People censor slurs on blogs because if someone is the target of a slur, seeing it written out in full is usually more uncomfortable than seeing it censored. I speak from experience.

If that's true, then why only blank out two letters? Why not just the whole word? It's like, either do the whole thing or don't do it at all.
If you blank out the whole word, readers won't know which slur you're talking about. If you leave it completely uncensored, it'll be ever more uncomfortable for the people who have to deal with that slur than if it were partially censored.

Like when you write n****r everyone knows what you're talking about. This is different.
That Dave Chappelle example is... odd. I'm not sure the exact context, but it seems at least slightly racist. Did he really think that white people couldn't understand his humour?
Aside from that, I agree that not all jokes are exempt- it is largely based on intent. If you make a joke about how Asians can't drive, and actually believe that, then yeah, that's pretty bad. But that doesn't mean every joke about Asians being unable to drive is bad. That's the part I think people miss.
