Regardless, even with Peridot's help, they'll clearly need an Alcubierre Drive to make a useful spaceship, which probably needs some hard-to-reach parts/materials. Maybe that's what the thing in the moon base was, though just grabbing it seems too easy.
She's good at her job, but she's no Tony Stark building ships out of a box of scraps.
In regards to where one might get an Alcubierre Drive... well, the Hand Ship that Jasper and Peridot used to get to Earth in the first place probably had one. I'm not exactly sure what the Crystal Gems did with the wreckage of that ship (though Amethyst's room is always a solid guess), but it wouldn't be totally out of left field if enough of that was salvageable that Peri and Pearl could build a workable ship.

It was actually a plot point that Buddy didn't illustrate or mention the color of the palanquin, because the drawing was of Pink's but it turned out to be Blue's—though they cheated that part (deliberately or accidentally) by making Buddy's drawing have none-color details specific to Blue's palanquin.
I think it was always Pink's, Blue's just happened to be there when Steven and Greg got to Korea.

They now have Peridot, who has a working knowledge of current Gem technology. She could help them build a new and better ship...with lots of complaints about the substandard tools and materials she’s forced to work with, of course.
