As for Jack's age, some teens do look like they are way older than they are (while some look younger).

Also, I imagine that Zimmy's terrified at the thought of what might happen if Gamma's not there to be her etheric heat sink equivalent, so while she may be manipulative and possessive, there's a lot more going on than just "she's mine, you can't have her."
