The absolutely perfect comedic timing following the Vampires of Venice line "We shall call for the steward...if you're lucky." Words can't do it justice. The vaguely pleased "I'm gonna get some!" look on Eleven's face, followed by "...I'm going to go now."
"City of Death", basically everything that occurs between the Count and the Doctor when they first meet - sample "what a wonderful butler. He's so violent" said with the usual fourth Doctor's enthusiasm, to "my dear, no-one is as stupid as he seems" from the Count showing that he sees right through the Doctor's obfuscating stupidity.
