The biggest issue with the Sonic 1 remake is the physics. Among other things, movement is heavier and stiffer and you don't need to build up any momentum to run up hills, even steep ones, and you can stand still on said hills.
The level layouts are also inaccurate, most notably in lacking the ramps that shoot you upward, but also having an extra badly-designed part in Green Hill Act 1 that causes you to die just for going fast and running into something meant for you to run on.
Sonic 2 is even worse. Aside from reusing the same poor physics from Sonic 1, there is a tacked-on team mechanic there was not a hint of in the original. Tails, Knuckles, Metal Sonic, Ray, and Vector can't spin dash nor participate in boss battles. The only reason characters like Shadow of all characters are even in it is because of this tag team mechanic there was no reason for. You cannot recollect rings or skip across the surface of water, even though you actually could in the original.
Imagine if the official remasters of the 16-bit games had inaccurate physics, changed level layouts, and forced you to play as two characters at once for no reason.
Sadly, the existence of these "remakes" have made it unlikely somebody will actually do remakes of the original 8-bit Sonic 1 and 2 properly.
