It just seems like a more appropriate quote for him, since it basically defines him as a character (the whole \\\"I just dig holes, it\\\'s up to everyone else to follow me\\\" theme).
I think this was actually his old quote before it got changed. At least, I remember \\\"I\\\'m Simon the Digger!\\\" being an old quote.
