You're making this needlessly hard on yourself. No wonder you're having such a bad time. I did grind for KOS-MOS when that wasn't an option (it would be the first playthrough I had getting her, and she was my last rare blade), and I can guarantee you that you're not missing out on anything by skipping the opening scenes and viewing the rare ones later. Skip the openings, and you can open far more cores than you did before in the same amount of time. Complaining about it isn't going to unlock her any faster.

Honestly, KOS-MOS is hell.
I outright gave up on her after unsuccessfully opening 300 legendary cores in a row at high luck with level 10 idea.
So I'm stuck on the boss of Bionis Interior. I'm capable of killing everything in the dungeon, including the named enemies two levels above the boss. Ignoring the adds doesn't work, and attacking them works even less. What am I supposed to be doing here?

Where there's life, there's hope.Huh, that worked. I was running Shulk/Dunban/Riki, so I just needed to swap leaders. Which resulted in the adds not getting summoned for some reason? Feels weird to get punished for using Shulk, especially when the game has otherwise not really cared too much about party composition
...Also, why do the visions still pop up when Shulk's not in the party?
Also, the game punished you for using Shulk against High Entia Assassins. Shulk is also very bad against Nebula enemies.

Shulk does 1 damage against the High Entia regardless of your level and equipment (except in NG+, of course).

So, remember a hat happened when Reyn "used" the Monado in Shulk's lab early in the game? That's right, it didn't hurt Fiora. The Monado explicitly can not hurt the intelligent lifeforms of the Bionis... at least before you go through Prison Island the first time... and it just so happens that all your fights against non-Mechon intelligent life occur before that point.
Well, assuming that you ignore the fact that most Faced Mechon qualify as "intelligent life of the Bionis", which is in reality pretty much the whole point of the Face units: a anti-Monado weapon.

Except Tirkins and Ignas were clearly sentient beings as well and the Monado can cut through them no problem
What Measure Is A Nonhuman applies in this case, since Homs are humans, and High Entia are humans with stupid wings in their hair.
So ? The game's wording of what the monado can and can't hurt might be wonky (I wonder if the explanation is clearer in japanese), but the point still stands that the monado does jack shit to Homz, High Entia and nopons before prison island.

I usually take my time in Chapter 3, to build up Vandham's skill chart, and do every sidequest and activity I can up to that point. Then I rush to the end of Chapter 5 to get all party members in one place, then do the sidequests there and in Chapter 6. It's all a matter of preference, and it depends on how many blades you still need to develop and where they are. Of course, you need to get to Chapter 9 to get Mikhaill, but there ought to be enough sidequests at the end of the game to develop his chart as well.
I skipped the vast majority of the sidequests in NG+ because I already went full completionist on my first run before all the DLC was released.
I basically rushed through the story to reach the few things that are actually exclusive to NG+.

But you don't really get exp from challenges anyway. Or not much, I can't remember. Grinding Relentless Arduran with Chain Attack finishers is more effective anyway.
I should note that levelling Vandham or clearing his Affinity Chart doesn't really give you anything special or worthwhile. Only do it if you really like mindless grinding.
