Should Empty Levels be added? As the characters level, they do get more health, but the zombies gain damage in proportion, so you lose the same portion of health as before. But because of the increased health, it takes more healing items to heal yourself. Further, the damage inflicted by pipes/boards/planks/paddles laying around on the ground or what have you quickly become utterly useless despite random "Battered Sticks" becoming more powerful. Items also become more expensive to maintain, upgrade, or purchase, though this is understandable due to a proportional increase in funds gained per zombie slain.

On the other hand, it is meant to be played on multiplayer, and assumes that you have backup to keep zombies from doing as much damage.

Don't you also get abilities as you level up? I figure those would stop the Levels from being totally "empty". Possibly Nintendo Hard ?

I actually have the game, and when you gain skills you're character becomes notably stronger, either by gaining a new ability or through skills like Xian's "Telling Blows" which increases your critical rate (which in turn increases the chances of special weapons effects going off)
