Even after playing the game for months I still feel I'll never understand the game's sniping mechanics. Demoman standing completely still, focus at full charge, aiming dead center of his face? Miss. Two flaming guys running for health and I'm going for bodyshots? Double headshots, when one was clearly aimed at one guy's leg

Recently I've been having a lot of fun playing class wars (one team of all one class vs. another team of all one class) if simply becasue I have to play classes I wouldn't normally play.
Match-ups I've played:
Engineer vs. Sniper - this goes about as well as you'd expect...
Heavy vs. Soldier - the couple of times I've played this match-up the Heavy team as won all of them. I'm thinking higher health as well as Sandvich consumption has something to do with it...
Scout vs. Spy - 2x capture rate and faster move speed gave this to the Scout team easy..
Heavy vs. Scout - on payload, the Heavy team won this. Although the scout team was able to get all the way to the second to last cap, so I'm thinking map design and mode might effect this...
Heavy vs. Pyro - high HP and Sandviches (and longer range) win this for the Heavy team...
Barring snipers maybe, I can't really think of any other combo that would work in the spies' favor unless you have some really slick sharpshooters on your team.

Strangely, I've yet to see Medic against anything other than Medics.
You know what would be fun? An all-Battle-Medic match. Both teams can only be Medic, and secondary slot is disabled.
Though the Medic's own natural regeneration might make that get tedious anyway...

Mod the game to disable Medic's healing? Then you could heal your fellow Medics with crossbow shots, but you can't just hide behind a rock to regenerate yourself.
