For Brynhild, I could suggest the woman who's name eludes me at the moment, she was known as the White Lady of the Noldor, was forward in arms from what I can recall, ended up marrying the Dark Elf Eol. Luthien would also work for Brynhild, an unafraid Action Girl, desirable prize set with a great bride-price.
For Gudrun, Nienor.
Aredhel Ar-Feinel. Actually fits as Brynhild was a Valkyrie and immortal while she was in the service of Odin. Aredhel was an Elf and immortal. However, Luthien would also fit as she gave up her immortality like Brynhild does.

Sidebar: Tuor really got the best ending of pretty much anyone in the Silmarillion.
Yeah, they end up together and none of them has to die for it to happen.

I've also seen one of Harry Potter that's not really a retelling of it, but takes place many years later in that universe.

I've read a number of stories on FF. Net that are basically retellings of fairytales, legends or myths in whatever fandom they are written for. Due to my love of Tolkien and the Volsunga Saga, I cooked up an idea for an AU with Bard playing the role of Sigurd, Thorin playing the role of Regin, and Smaug playing the role of Fafnir.* Odin would be played by Gandalf. My problem is that I want names for two female OCs who would play the roles of Brynhild and Gudrun, and I have no idea how to invent plausible names for them.
