I saw some speculation that she's been compleated, which would be an interesting way to start bringing the Phyrexia and Eldrazi plots into contact with each other, but seems a little unlikely compared to vampirisation or angelising (exaltation?) seeing as Sorin is right there.

Has it been said that explicitly? I am aware that Phyrexians can't hold a planeswalker spark (by dint of not being properly alive) but it would still be possible that a planeswalker can be compleated - possibly with difficulty - but loses their spark in the process.

No, in fact, merely having a Spark makes you immune to phyresis. That's why David Tennant Venser transferred his Spark into Karn to save him. Once Karn was re-sparked, he was free from the Praetors.
Planeswalkers must be previously de-sparked to be compleated, not the other way around.

As I've said over at reddit....Nahiri is now an 18/18 Eldrazi (with 18 casting cost obviously). Probably Annihilator 8 too.
I'm reading this because it's interesting. I think. Whiskey, Tango, Foxtrot, over.Jossed! Annihilator is at 8 on the Storm Scale, and apparently quite hard to develop, and Maro has commented that he thinks the same flavour can be achieved without the same mechanic.
So even if she is an Eldrazi, the odds of seeing Annihilator at all are not good.
I would assume that, in case a dormant Spark didn't protect the holder from phyresis, the process of compleation would be traumatic enough that it would trigger its ignition, saving them from it.
I mean, Narset's Spark ignited with something far less traumatic than being turned into an unliving abomination where flesh and metal interweave organically with ceramic plates grown from your own bones. So I feel pretty safe about this.
Note: All my info comes from Doug's and Maro's tumblrs and the scraps I could gather at mtgsalvation's wiki. If someone read the novel where Karn is, ahem, Liberated, it could contradict what I just said. I'm anyways pretty sure either Doug, Maro or both said the Spark makes you immune (which is reasonable, since neither Elspeth, Koth, Tezzeret nor post-New Phyrexia Karn show the slightest hint of phyresis, and all of them were waist-deep in Phyrexia's proverbial shit back in Mirrodin), but the details about re-Sparking Karn and what happened after are a bit fuzzier (mtgsalvation says Karn was freed "moments after" Venser gave his life to transfer his spark).
EDIT: Not directly related with Sparks and Phyrexia but Doug has just kicked my theory about the traumatic-ness of phyresis bursting your Spark aflame in the butt.

It's something that could save you, but I guess it's not a guarantee, huh?
Someone should ask Doug about this.
My local Hastings had a game day draft. I ran Bant as I a lot of the good small creatures coming were green, and my first pull was Ojutai's Command was in my first pack. I won first place, though I had a by in the second round and every game went to three rounds. I walked a way with 7 booster backs and a promo Suspension Field.
The monuments are really good in draft. The are extra mana/color fixing fairly early and a good bomb late game.
I didn't remember that bit about Tezzeret, though. But it still wouldn't explain why Elspeth or Koth aren't infected, for example. As for Karn, well, if the Spark doesn't make you immune there's always the chance Venser could have done something about that since he sacrificed his Spark and life to save Karn (and he was with Melira there, the only known person in the Multiverse that can actually heal phyresis).

It says Pthisis in Quest for Karn (which is awful. I would avoid reading it if you can).

I can see her having been "Eldrazi Conscripted". That seems the most likely out of the theories stated here.
I don't think her being Avacyn makes much sense, since Sorin was looking for her and such, and wondering where she was, after Avacyn was restored and he knew exactly where she was, compelling as that idea is.
As for phyrexia-related things, they seem unlikely, more by virtue of them being too unrelated to make sense. If they wanted to connect phyrexian and Eldrazi things, I don't think they would do it in such a weird way, like "someone who fights these monsters and is entirely defined by her struggle with them is now related to these other monsters for some... reason...?"
