Hmm. Some searching on likely sounding phrases turned up some tropes that seem related, but not really what you're looking for:
- One Last Field Trip is more about nostalgia and revisiting prior experiences rather than trying something new.
- The Last Dance and Last Day to Live relate to people who think they're dying/doomed doing stuff they wouldn't otherwise do.
I'm sure it's already got a name but I'm blanking on what it could be called. Basically the trope is where there's a big event coming up at the beginning of the movie, and the main characters decide to do something great before time runs out. Most recent example I can think of would be Good Kids on Netflix, where these kids are going off to college at the end of the summer and decide to do whatever they've always wanted to do before the summer ends.
