The Quick Draw page mentions Eastwood shooting four men in one draw in the Dollars Trilogy. Unfortunately it doesn't say which of the three films that happens in, and neither do the films' pages, but assuming it's the same incident that at least narrows it down some.

EDIT: But if they're talking about this scene from A Fistful of Dollars, it doesn't seem to be the same incident after all.

That's The Outlaw Josey Wales. It's probably the most iconic scene in the movie.

Just checked and that must've been it. The scene plays out fairly similarly, Clint Eastwood is there and it's from a movie I've definitely seen before. The other details I probably misremembered. Kudos to you both!
