I can see gamefreak going that way with Gen 8, since so many long time fans have been asking for it, thanks to the likely switch to HD with the Switch.

Yep. Ride Pokemon take their place. No more HM slaves. No more wasted move slots, no more "Guess I'll have to come back later" except for earlier in the game when you simply haven't unlocked a particular ride, yet.

They're commonly cited as one of the worst mechanics in the series so unless Gamefreak are just that out of touch I doubt they'll ever come back. They made TMs infinite use and that's stuck since, so quality of life improvements that significant tend to stay that way.
Rather or not Ride Pokemon will always be in the games is a different story, though. It makes the most sense thematically, but I could see them put twists on it in each new game.

The people In-Universe who make Hidden Machines I'd assume.
So what about stuff where you don't necessarily ride Pokemon (like using Cut or Strength or Rock Smash)?
Beyond that, I'm kinda glad that HM's are gone, though I'll miss them a little.

According to Bulbapedia's HM page, two Swimmer Girls appear at Poni Breaker Coast (in the post-game); they apparently explain that HMs are difficult to make and that, in most regions, they cannot legally be sold.

It's adorable, i love it. I certainly never really found it annoying, since he doesn't constantly remind you, "hey you need to go places" (unless that marker on the bottom counts as constantly reminding you, but remember, it could be worse).
Also, the fact that the he doesn't constantly tell you "go progress the story" every 5 seconds means you can go do whatever you want before progressing.
