Urobuchi wrote Fate Zero at the height of (or at least during) his everyone suffers all the time every time phase.
It was after Madoka that he broke out of that by actually giving the characters something of a happy ending (or at least one where things had the chance to get better, even if there was a lot of sacrifice to reach that point which would not have happened in his earlier works).
The Urobuchi who would have been hypothetically brought by Anno to help with Rebuild would have been a post Madoka Urobuchi. One who might have even talked the latter out of such a bleak ending (while maybe keeping it a little depressing).
Edit: I don't think he really wrote Rebellion himself though. The studio shaft guys or whatever did it, and he agreed with it, but he didn't actually do it himself I think.

... And what is his definition of "happy ending"? Because if he considers the ending of the original PMMM show to be an example of such, then that means very little.

Production crew included.
It was Idiot Plot: The Movie.
As depressing as EOE was (though I've never watched much Eva. I think the whole thing is too much of a black hole for me), there was still the chance for everyone who turned into LCL to come back if they wanted.
Rebuild 3 has left no opportunity for things to be fixed. Shinji wrecked things so thoroughly for himself and others (even when he was trying to fix things) that there's no chance for anyone (especially Shinji himself) to get even the chance of a potential happy ending sometime down the line. There are no avenues to better things anywhere.
I can't go into details because I never watched that movie either (I think that the entire series is just so utterly hopeless that it's turned me off watching it completely) so someone who knows more about it could probably say more.

Some might still use class when referring to original 7 from Fate Stay Night though (Saber Arthuria, Archer heavy spoilers, Lancer Cú Chullain, Berserker Heracles, Caster Medea, Assassin Sasaki Kojirou and Rider Medusa).
It varies. For several of the Fate-series works (Fate/Zero included), as long as you've provided context as to which story you're talking about, you can just give the class name.
For some other works, such as Fate/Apocrypha or Fate/Grand Order, there are a lot more Servants of each class, so referring to them by name is more helpful.
EDIT: That's just talking from fans discussing the setting though. In-universe, most Servants are referred to by their class, so anyone else listening can't discern who the Servant in question is, because some Heroic Spirits have very distinct vulnerabilities (Servants who died of poison will not handle being poisoned very well. If Achilles were summoned, anyone who learns his name would know to aim for his heels, etc.).

We usually refer to them by their name, unless we're talking about one series in specific (Usually the original Fate Stay Night one)

Fiat iustitia, et pereat mundus.We either use the names or the class with some classifiers - if you say just the class name, people will think about the ones from original VN. So for example saying just "Saber" everyone will think of Arturia, when talking about Saber from Fate EXTRA you say Saber Extra or Red Saber etc. It get the more complicated the more Servants there are in a given title so everyone just uses names for Grand Order servants.

Except it's Urobuchi who was the writer for the Fate/Zero light novels, which were published between 2006 and 2007, putting its debut at six years before MadoMagi. And Rebuild started in 2009, with the infamous third movie being released in 2012, merely one year before PMMM.
... And how different is post-MadoMagi Urobuchi, anyway? I've watched the entire PMMM TV anime, and the ending left me extremely bitter... then I had to learn that he more or less spat over what little happiness that was earned in the last episode by making The Rebellion Story (I've yet to watch it, but the few limited spoilers I accidentally discovered caused what little optimism I had about it to hit rock-bottom), and that left me vowing to curse Urobuchi's name for the rest of my life.
