I can sort of dig yuri. Honestly, it's more fun watching the reactions of otakus to yuri than watching yuri itself, at least to me.
Usually I don't really like yuri because I'm more into yaoi, but the one and only yuri pairing I actually like is Azusa/Yui. I'm the type to ignore Les Yay and just excuse that the girls are really close friends, but Yui and Azusa... they were just way too cute to be just friends.
I may become more of a Yuri Fan in the future, but for now my Shipping Goggles in that department are for Yui and Azusa only. <3

One of the best doujin yuri authors I've seen in recent memory is Peachpulsar (NSFW as fuck, mind). These are some of the most fluffy things ever, and the guy's art is pretty good as well.
As for yuri pairings, ironically, I have none. I don't have actual pairings, but if you made me make a list of characters that look hot together...:3
