What is the difference between WMG and YMMV? If I have a theory about a character that is backed by evidence ( like events in episodes) within the show itself, where would it go?

YMMV is about subjective tropes and audience reactions. WMG is where you put "guesses and speculation", whether confirmed or not.

Theories belong on WMG, no matter how plausible they are.

Opinions and reports of opinions (Audience Reactions) belong on YMMV, but only under the correct trope label. The YMMV tab like the trivia tab is a specialized trope list and only contains information that is beside a blue-link.

So if I thought for example, that a character's motivations were due to being poor (that has evidence within the show) would that be a YMMV or a WMG? It would be my personal opinion but I don't know if that would be a theory.

It could also go in the Headscratchers subpage. So far as I understand it, Headscratchers is questions ("Why did Bob do this?", "Where did Alice go?" "Alice eating Bob makes no sense") while WMG is thesis statements ("Bob will regrow from his arm like a starfish", "Alice was hiding in a cupboard").
