Pretty Woman stands out to me for some reason. It's the only romantic comedy that doesn't seem so forumlaic and when it does it's very self-aware and subversive (like the end when Richard Gere literally rides in on a white limo as if he's a knight on a white horse and proceeds to climb a fire escape, conquering his fear. Like it's so cheesy, but the movie knows that). The premise itself is pretty unique too, and there's a surprising chemistry between the leads. It's the one Rom Com that's just utterly uncomparable to any other Rom Com out there, that I've seen.
How To Lose A Guy In Ten Days is also one of the only Rom Coms I like, because it too is pretty subversive and self-aware. The entire premise feels like a satire on the usual tropes of the genre, where people really do fall in love for stupid reasons over such a short time - but it still ends like a stereotypical romantic comedy which somehow feels like a great punchline to the joke.

The Holiday with Cameron Diaz, Jude Law, Kate Winslet, and Jack Black is quite charming. No overtly cheesy scenarios, no excess wackiness, no cliche roles. Just a film about two different woman connecting with two guys in unexpected ways.

Seconding Forgetting Sarah Marshall.
I like 27Dresses for the simple reason that it breaks the cliché of the over-the-top apology by the guy and instead ends with the female protagonist apologizing for her actions (even if some of them were justified). I always compare it to Hitch, which ended when the male protagonist apologized for getting justifiably angry about the Love Interest publishing an untruthful article about him, while that movie ended with her apologizing after getting angry at her Love Interest publishing an unflattering, but truthful article about her family.

Mine is \'\'French Kiss\'\'. It\'s formulaic, but Kevin Kline and Jean Reno... they make this film.
