Do I HAVE to buy DLC for 2 and 3? I got the Trilogy for my birthday and yet I feel as if I don't have everything.

If I had to choose it'd be these DLC:
2-
Cerberus Network, Kasumi-Stolen Memory, Lair of the Shadow Broker, Arrival
Overload gives an interesting story, but not necessary. Rest are either weapon or appearance packs.
3- From Ashes, Extended Cut, Citadel.
I like Omega & Leviathan, but they don't add too much to the story. The rest are either extra weapons or armor, or they're needed for multiplayer.

I'd highly recommend the citadel DLC. It was a ton of fun and a good value. The From ashes DLC is great but several people feel that it should have been included in the base game and boycott it on those grounds. If you don't really care and think it's worth it for 1 mission/companion/weapon then go for it. I'd suggest just checking out his bits on the wiki/youtube and save your money.
Is using "Julian Assange is a Hillary butt plug" an acceptable signature quote?In 2, you should get Lair of the Shadow Broker (includes the best fight in the game hands down), Kasumi's Stolen Memory (because Kasumi is a very nice character), and Arrival (very average but rather important storywise).
Overlord features an interesting story but it is not that important either to the plot or to ME 3, aside from two possible NPC encounters. But if you want your Shepard to be a complete dick, you get a truly wonderful occasion here. The rest are weapons and stuff.
In 3, pick Citadel. No-brainer. The best DLC in the trilogy, and in the entire year all games considered. It's challenging, but most of all it's a huge lot of fun with ALL the characters from the trilogy. Amazing, really. Take From Ashes too, even if it has already been mentioned that it should have been included (Day one...). Leviathan is interesting for lore reasons, and is rather atmospheric.
Omega however should only be chosen if you don't care about money, or are a huge Aria/Omega fan. You can't bring squad members, and the story is very dumb from beginning to end (and Aria isn't exactly glorified in it). A good character is added but...well, see point about the story being stupid.

Omega can be skipped without missing anything important. Though I will say, I found the villain fairly likeable, and this is from someone who thinks Cerberus is the worst thing about the Mass Effect series.
Citadel is a must play if you want to wash out the awful taste the ending leaves you with.

The problem with Omega is that it's almost entirely combat with very little character interaction or choice to be had, and you're fighting Cerberus yet again. Omega is probably the coolest location in Mass Effect 2, but just blends in with the rest of the pointless combat missions in Mass Effect 3.

Well, I'm still on the first one and I'll worry about the other two later. Might put them off and wait until I have the funds because I buy all my DLC with Prepaid cards.

This is why I say Extended Cut! (but I enjoyed either ending regardless, which does place me in a very quiet minority)
I really enjoyed Leviathan. The creepy miners were awesomely creepy. I actually liked the level where the sky was filled with Harvesters - it was a fun level to fight through, and the metric shit-ton of Harvesters was cool to see. The fight on the not-sunken ship was also really, really fun. It was tough, due to the limited cover and large number of enemies. So I found it fun to play through.
I enjoyed Omega. I found it pretty fun. Nothing special, but I liked it.
Citadel, of course, really is a must. It's ridiculously fun. So many great bits.
Extended Cut is also a necessity. Especially since it's free.
For 2, I would agree with Lair of the Shadow Broker being a must, Stolen Memories being a strong recommendation (I love Kasumi so much - Shadow Strike is amazing), and Arrival is something I recommend. It contributes quite a bit to the story, and I find it fun to play. Sneaking around the prison is really fun, and the Object Rho fight is awesome. Overlord is good and creepy, but I'd agree that of the main DLC, it's probably the least necessary.

"It's so hard to be humble, knowing how great I am."Arrival has the first of many fights where Shep's enemies are clearly pissing themselves, which is always satisfying.
Omega's fights are fun (the new droids are good enemies, and it is stuffed with turrets), the problem is that everything else is rather meh. Don't play it for anything else than gameplay experience - because your team during this DLC is borderline overpowered with two of the strongest allies in the game.
Also, I don't think Extended Cut is free anymore now. Cheap maybe, but free I don't think so (I think it was free for 365 days or something).
Can confirm that I had to pay money for Citadel. But Goddamn it was worth every cent.
