Any of FMA/Brotherhood's ED's, but special mention goes to Hologram for Brotherhood's finale; it just feels right.

The Shin Sekai Yori endings are pretty good. Too bad I can't locate the actual videos that go with them, which have really good art. Copyright?

Nichijou ending, Zzz, for the first few episodes. It's a really sweet lullaby.

Anohana's ED. Yes, I know it's a cover, but it's still very good, plus it was used very well.

As a Baccano fanboy, I'd say Baccano's ending is nice. Another one that comes to mind would be Nisemonogatari's ending song.

First ending of Spice and Wolf is my favorite,(https://www.youtube.com/watch?v=Vo_wVKQMSBc) both the music and the animation calms me down, Nichijou's "zzz" also has the same effect on me.

For more energetic ed's, K-On's "Don't say lazy" is a great one but this ed of a dancing anime is the anime ending theme:

I'd like to follow that Beauty of Destiny up with the Way of Memories. Awesome second ending.

All of the Soul Eater eds are unbelievably kick-ass. (I don't even think this is all of them.) But I think Crona may be my favorite just for how adorable it is...

Hmm... I'm going to go old school here:

Maison Ikkoku's Will There Be Sunshine Tomorrow was quite moving.

I also really liked Ranma One Half's Platonic

But the best was Scarlet Scarf from Star Blazers. Haunting enough that I remembered it from 20 years ago, long before there were things like youtube to allow re-listening.

The Sayonara Zetsubou Sensei ops and eds are really catchy and cool.

At the moment, Koi No Wana.

Darker than Black ED 1

Black Lagoon. Some of the grimmer episode endings segueing into this produced a simply chilling effect.

Also seconding the Soul Eater endings (but not the series ending that can go to hell). Also the third ending always seemed to me like it should be an opening.
