Steven has misinterpreted things in the past.
Hell, Steven misinterprets things all the time when it comes to proving his own inferiority.
Besides, "theory" outside of a scientific context is basically another word for "guess."
The three times Steven attempted to healing and it worked, it was on living beings (Lapis's gem, Connie's eyes, Greg's leg). The two times it has not worked, "psyched out" or otherwise, we're when he tried it on objects.
Scientifically spaking, it's more "theoreticaly" sound that it only works on living beings.

It makes more sense to assume that, like all of Steven's other powers have worked since literally Day 1, it's based on his state of mind and emotional abilities. If Steven gets "psyched out" and mentally/emotionally can't summon his healing powers, then he literally cannot summon his healing powers. And like everything else in the show, the wounds that something like what Greg did caused don't heal in the space of 11 minutes.
Steven will eventually, inevitably get his healing powers back. But it might take some time and work, and they might not work the same way that they did before.
An answer that was noncommittal as to whether or not he would have been able to fix the geode in the first place.
It's entirely possible that he's lost his healing for the time being, but he he has healing spit, not fixing spit.

That's because chances are he would have, maybe? Again, his powers are emotion based. Greg's actions have a direct impact on Steven's emotional state, both his present moment to moment and in his long term development. If something like what happened in House Guest happens then his emotional state, and thus his powers, are going to suffer long term consequences.
If you want to look at it from another potential perspective, perhaps this is some sort of Gem puberty? His growth as a human and hormones and shit directly interfering with his gem powers, causing some to activate and some to regress at random?

2. Height is relative in SU, especially when Stevonnie's only been present in an episode and a scene, with really only Greg existing as a constant point of comparison.

Even if you want to aggressively focus on the word "theoretically," Hilary unambiguously states that Steven lost his healing powers as a result of Greg pretending they didn't work on him.
And if you're right, it wouldn't just be Steven who's misinterpreting things. The other Crystal Gems spent the first half of "House Guest" certain Steven's powers would work on the geode. Why are we just assuming we know better than them?
Though honestly, Steven talking about his healing powers "not always working" in the guidebook and "Catch and Release" kind of weirds me out. Makes me wonder if they decided to soft-retcon it.

It's because Steven's powers are straight up weird. It doesn't make sense that Steven's powers, with Steven knowing that his powers should work, would not work. If it's emotion based, then it's emotion based on a level a lot deeper than the moment to moment, and if it's development based, then there's no way to predict what abilities Steven will gain or lose next.
Steven is in a lot of ways an experiment that no one knows the outcome of, so it makes sense that Steven wouldn't be sure about if they still work, if they're gone forever, if they're randomly turning on and off, or if they have other unknown requirements to them.
Hopefully they the concept of Gem storage, that still seems likely...in my mind.
