I'm quite confident in my shitposting you knowThe Sunken Gelnika has some very challenging enemies. Be warned. However, you should do it before you do the Midgar assault, because otherwise you'll lose the opportunity to fight the Turks again and steal some good items from them.
Oh, a tip: don't use any Elixirs, ever. You need them for the Very Definitely Final Dungeon, in the level grinding area. Feed them to Magic Pots to make them vulnerable to attack.
Elixirs can't be bought, but they can be stolen and/or drop from some enemies — most of them also in the Northern Crater.

wait, can't you go to the Sunken Gelnika when you get the sub but BEFORE you get to when the Gelnika launches?
I'm quite confident in my shitposting you knowEr. You can get to the Sunken Gelnika as soon as you acquire the ability to move freely around the map with the submarine. I'm not sure that it's attached to anything else in the plot.
Other things that you can do with the sub include finding Lucrecia's Cave (where Vincent gets his Chaos limit break and his ultimate weapon) and retrieving the Key of the Ancients, which is a required Plot Coupon. You can also search the sub that you defeat in the Junon sub mission (if you beat it, which is stupidly easy) for a Huge Materia.
Oh, and of course, you can fight Emerald Weapon. Good luck with that.
Edit: One other thing, all of the enemies in the Sunken Gelnika can be Morphed for various Sources (Guard Source, Speed Source, etc). It's the best place in the game to farm them, and the only method to max the stats of all your characters if you are so inclined.
Doing this is probably more tedious than raising everyone to level 99, but hey, it's a thing that's possible.

I'm quite confident in my shitposting you knowHaha, Ribbons prevent that. You can get two in the game from chests. Past that, you'll want to get them from Master Tonberrys in the Northern Crater, which requires Morphing them.
Strategy for this is as follows: First, use Stop magic or the Hades summon to paralyze it. Big Guard helps to boost your speed so you can get in more actions. Hammer it with powerful attacks for a few turns (making certain to Steal or Mug its Elixir). Then start using Demi (not Demi 2 or Demi 3) to get a sense of its current health. It is immune to Sense and is healed by Gravity magic, so this will heal it for 1/4 of its current hit points. Keep attacking carefully until it's low enough to effectively Morph. Oh, and if you used Hades on it earlier, it'll be poisoned which will kill it. So that's a good reason to use Stop instead.
If it gets in any actions, be prepared for Everyone's Grudge, which deals unresistable damage equal to 10 times the number of enemies the targeted character has killed. Cloud in particular tends to get massacred by this. When it reaches your characters, it will use an instant death attack on one of them, which I believe can be prevented by Death Force, but I have never tried.

You can always get Beta from the Midgar Zolom. Just go back to the Midgar area and walk around in the swamp until it attacks you. It will sometimes Knock Away the character with the Enemy Skills materia, which is annoying.
There are only a few Enemy Skills that can be Lost Forever. Trine is one of those, not sure about the others. Although I think you can even get Trine in Disc 3 if you fight the Materia Keeper as one of the bosses in the bonus battle in Battle Square.

"Get interesting" is something of a loaded phrase. By modern standards, its plot and characterization are fairly simplistic, and its graphics are ludicrous, but you have to remember that this was a groundbreaking game when it released 16 years ago. If you already know the story, then playing the game is more of a nostalgia trip than anything else. The battle system still holds up quite well, though.
If you don't know the story (and congratulations on somehow remaining unspoiled despite copious It Was His Sled), then pay close attention to the characters and dialogue. The big mysteries and plot reveals start in the Shinra building, but the first major dramatic payout comes slightly before that in the battle over the Sector 7 pillar.
