While there are some cases where this trope is justified, often times I wonder it is mostly used to bring down characters and people you don't like. How can deconstruct this trope without attacking the reader seeing it?

Bit by bit, little by little.

Set up one character as the proud/haughty type who rubs a different character the wrong way (for justified reasons), have the second character decide to try and bring the first down, have them initially enjoy the proud characters new humbleness, but eventually realise just how much this damage they've done and become sickened with themself.

Essentially, the audience should identify and empathize with the second character, which puts them at a one degree removed from the action.

I think I've seen stories along this line when attempts to Break the Haughty end up causing the haughty character get Driven to Suicide.

I don't know - I tend to appreciate Bt H straight more than subverted. Subverting the trope means you've got an arrogant character, and the events of the story reveal to her that she really IS that much better than everyone else. Is that what you're trying to do?
