Jerzy is formerly bi. He claims to have transitioned to fully gay, but Angel is currently trashing that delusion. Yuki is canonically and demonstrably bi. Word of God says that Kiley is straight, although she's currently under the influence of the hypno-boobs. Sandra appears to be solidly straight, although she got DiDi'd herself in the past. Ruby shows strong signs of being straight; Andy appears to be too, despite a deranged tendency to hero-worship Dillon.

Dillon is very, very gay. One or two heterosexual experiences merely served to prove that.

Oh, and Sandra certainly thinks that Fabien is gay, understandably given his mannerisms. Personally, I think it'd be funny if he turned out to be happily heterosexually married with kids and a strong belief in giving his customers what they expect from a hairdresser, but that's just my Head Canon.

OK, methinks that Kiley has suffered some sort of traumatic experience involving a huge-breasted girl in the past that gave her megalomastophobia.
