I have a message from another time...Yeah, the Beta Couple doesn't have to have some huge plot relevance. Maybe something will happen, but there's nothing wrong with them just being a happy couple without any crazy drama or supernatural stuff.
I've assumed all along their relationship will eventually end horribly, but at least they get to be happy for a while.

Why? Why does Paz, specifically, have to be "justified?"
"It's so hard to be humble, knowing how great I am."Because I want to know why characters are in the story and I can't think of anything to say about her relation to what's going on other than that she's Kat's girlfriend. Like if I look at Eglamore I can point out his role as court protector, his connection to Annie's mom, his awkward relationship with Annie, his handing his role down to Parley and how his relationship was used to explore how Jones sees the world. Contrasting that, Paz is nobody in particular, has no real connections to anyone of interest and her relationship with Kat has yet to tell us anything new about Kat. If this reveals something interesting about Kat I'll be satisfied with that.
I'm not really asking for much here, only asking why Paz is getting focus when there are so many other plot threads and character arcs unresolved that having nothing to do with her.
Edit: If it makes you feel better, I'd feel the same if Hetty had lasted more than one chapter and Tom had decided she should totally move in with Reynard for wacky adventure time. I liked Hetty, but that doesn't mean she actually added anything to the story other than exploring Reynard's past decisions and how he feels about them in the present. Nor does it mean that she was a complex character necessitating a great deal of exploration.

If Paz and Kat reveal they are combining their brains metaphorically for research into robots that can speak to animals. I'd be cool with that.
Other than that it's not bad to have a character there to be friendly.

She's just in a couple panels here and there, it's not taking any focus from other stuff. Currently, her presence spices up the dynamics between Kat and Annie. If she actually becomes the focus of the story, it probably will, in fact, be something important.

Paz is a genuinely sweet person who's found a use for her talents. She's a civilian, she's Kat's girlfriend, and that's important in and of itself. Ordinary people are very important to have in any narrative because they keep the story grounded.
Right now, though, she's serving an important story function by reminding Antimony that Kat doesn't just belong to her. that's a source of quiet tension. Annie doesn't currently have a romantic interest, and romance for her is always going to be really awkward/painful. Her mom died because she was born, a mom she loved very much, and I don't think Annie wants to die.
Being who Antimony is, heterosexual romance has really good odds of meaning death for her. Homosexual romance has a lot less risk, in that respect. And Kat is the most important person in her life, so seeing someone else be just as important to her is hard for her. Especially since her relationship with her mom basically had her mom's free time revolve around her with her dad absent, so it's not like she's very used to sharing.
tl;dr: Paz is important for Reasons.
