It's clearly stated at the beginning of the episode that the documentary was intended to capture the intended record-breaking pillow fort, but became about the pillow fight once everyone split up over whether to make a pillow fort or a blanket fort.
** Which is an odd twist, given that the documentary is implied to have been made to document the record-breaking pillow fight.

** Pierce defecting from Troy's army to Abed's after Shirley is promoted over him is a reference to Benedict Arnold; one of Arnold's grievances against Congress which prompted him to conspire with the British to surrender West Point was that he was passed over for several promotions which he felt he was owed.
