Not impossible at all; plenty of people play guitar with various disabilities, including lacking fine motor movement or the entire limb. In addition, the game director in the official interview (https://bethesda.net/en/article/5w7QjbYefaT7pJry6pMcIa/hi-fi-rush-game-director-interview ) mentioned that Chai actually has no idea what being a rockstar. Full quote:
"The rockstar idea is interesting because it’s more of a dream than an actual career goal. What does a rockstar do? Chai probably doesn’t even know except they are famous and people think they are cool, so that’s what he’s about. He wants the perks but doesn’t want the painful journey of getting there. But that’s part of the tough lesson he must learn."
The guitar was sort of a symbol. If he could play like everyone else, he'd be famous like everyone else - when there's wayyyy more to being a rockstar than playing.

I do not see how that contradicts the example or is a meaningful distinction. Being a rockstar would require playing the guitar, which was impossible for Chai without Project Armstrong.
