What is is called when this trope is applied to an in-game character? For example, other in-game characters keep talking about "The King", but the King himself is never seen.

That type of character is called The Ghost. They're are discussed but never seen. If they are really important to the plot it's called Present Absence.
Should we add the player from the Submachine series? He/she/it is never shown on screen and fans have in fact been posting theories about who exactly the player is.
