"Fundamentalist" wasn't supposed to mean "over-the-top religious fanatic" per se (although critics of the orignial "fundamentalists" might consider them that). the term comes from a set of essays entitled The Fundamentals: A Testimony To The Truth which was an attempt to reaffirm what was seen as the principles of historic Protestant doctrine against modernist influences and thinking which might seek to undermine it. It's possible to hold to such beliefs without resorting to misguided sorts of zeal- then again, it is far too easy not to do this, too.
I read the term "moderate fundamentalists", and my brain imploded.
