You got it backwards. It's dodging by way of breaking.
But Brake Dodging would work, since it still makes it clear it's dodging (not "Dodge Breaking", which implies breaking the dodge).

Also, I think the point of the trope isn't so much about being in the air (as it can be done with ground vehicles too), so while Air Brakes is a cool name not sure that it fits.
It's not really about dodging either.
It's about hitting the brakes so as to bring you opponent into your gun sights while taking you out of their gun sights.
