I'm really starting to get impatient. I understand they want it to be the best episode it can possibly be as a potential Grand Finale, but the constant updates and sayings of "just wait" make me feel like this episode isn't going to be as good as they're hyping it up to be.

Of course, its entirely possible that plans changed for that scene and they decided not to go through with that.
I don't expect it will ever be 100% set in stone.
Rather, I expect they'll probably leave the door open for someday coming back to it if the issues precluding them from continuing ever get resolved, and then that just never happens. That's how these things typically end: indefinite hiatus rather than explicit cancellation.
Creators rarely come out and just say, "No, I will absolutely not be making anything more of this popular series ever again." Because there's really no reason to see it, and sometimes you do get the itch to go back and revisit something that you've made.

Was it recent? Just curious cause all i got is Kaiser's reddit post saying that, without the hiatus, they would have immediately end it at Cell to do their projects all at once.
Burning love!Another option is that they could follow in the shoes of their predecessor, Akira Toriyama, and end the series. Then after decades of pursuing other projects, they run out of ideas so they come back to the show that made them famous.

This is true. He gave outlines for each major story arc and helped out with some things here and there but it was mostly left up to Toei and Toyotaro.
Although he did redraw some of Toyotaro's panels for him.

This song needs more love.Yeah, basically. Toriyama also has odd priorities. According to Toyotaro, he's very particular with the jokes and gags in the series, but he frequently leaves out major details from the plot outlines, such as Jiren's entire personality or how the Future Trunks arc ends.
Persoanlly, I'd like if TFS could move on to the Buu Saga after the Cell Saga, but I'd actually prefer if they decided to go backwards and Abridge the original Dragon Ball.
I don't know. I feel like we already have a pretty good gag version of the original Dragon Ball. It's called the original Dragon Ball.

My desire is less "make the original Dragon Ball funnier" and more "write the original Dragon Ball differently, but still in a funny way". The TFS crew have their own brand of comedy that's different than Toriyama's, more focused on pop culture references and character humor over slapstick and wacky reactions.

Secret SignatureI'd argue that there are three phases in terms of comedy in the manga - the beginning through the first half of the Red Ribbon Army arc (which is about 90% comedy), Taopaipai's appearance through to Tien's defeat (which was a period of about 70% comedy, with the villains now being serious threats) and, the most important watershed, Krillin's death at the hands of Tambourine through to basically the end of the entire manga (which marks a change to about 30%-20% comedy) which is where a lot of death and drama was introduced and gags took much less importance.
I honestly don't think most of the OG Dragonball stuff is good for DBZA, mainly because it's already mostly gags until the last two arcs, and also because... well... I think it's not as easily mocked. It's not until King Piccolo that the standard DB formula even enters the picture, and while there are plot holes and irrational behaviour (usually coming from Kami) they are again concentrated in those last two arcs. The previous ones usually don't have complex enough plots to have plot holes in them, and that's where a lot of the humour poking fun a the series comes from.
There are two other reasons. One is a completely different cast composition (no Vegeta, no Gohan, almost no Piccolo) which would make coming up with humour a lot harder. The final and probably most pressing issue... it would almost certainly be less popular.
