Hey, this is probably a frequent question, but I might as well ask. I'm watching the Fate/Zero anime, and want to read/watch FSN afterwards. I know that UBW got a good anime adaptation fairly recently — are there any such adaptations for the other two routes? Can I watch it without major spoilers for the other ones? Do the routes present different continuities, or just perspectives?

Dopants: He meant what he said and he said what he meant, a Ninety is faithful 100%.The Fate adaptation isn't a straight one; it tries to adapt elements of Unlimited Blade Works and Heaven's Feel into it, so the plot is all over the place at times. Plus, for an anime from 2006 it looks pretty bad, especially the CG mana dragons. The music is pretty good, though, and I liked the relationship between Shirou and Saber.
And of course, there's the Archer vs Berserker fight, which is never seen in the original Visual Novel (probably to keep Archer's nature a continued secret).

Of course, these days people like to point out that Archer is actually the shittiest character in existence, for reason that are both valid, and out of spite towards his excessive fans, but I still like this fight, just because it was nice of them to do.

Just read the VN, honestly. Yes, order matters, but you can't read UBW or HF until you've done the preceding route(s).
Well, most people do go out of their way to downplay him because they got sick of the memes behind him.
It's mostly just pointing out that he's not as good as some fans like to play him up as (him losing a lot of fights, being kinda pathetic since he's just trying to kill his past self due to his issues, etc).
Mostly because dudes went crazy with how great he was until others got understandably sick of it.

You do miss out on a lot of detail if you don't read the VN, but the UBW anime does a fantastic job animating it's route so its hardly necessary. With the Heaven's Feel movies the only route you "need" to read is the traditional Fate route.

I just read the first chapter of Melty Blood - Back Alley Alliance Nightmare, and I did NOT expect Lev of all people to show up.
And as always, being Sacchin is suffering. Although maybe a tad less in this one.

We can't have that." - Handsome RobThe UBW anime is pretty great all around and it's absolutely worth watching but you're going to be missing out on a lot if you don't read the VN. For starters, if you only watch the anime, you'll probably either not understand or outright hate Shirou because the anime, by necessity, cuts out basically all of Shirou's internal monologue (since the VN is 98% from Shirou's perspective). This results in several key points regarding Shirou's personality to be completely absent.
As an example, the date about halfway-ish through UBW is borderline filler in the anime but is extremely important to Shirou's character in the VN.

One Strip! One Strip!Nope. The date in the Fate route is more focused on Saber's character and Shirou's desperate attempts to get Saber to change how she views herself.
The date in UBW is... kinda the same but Rin is simply trying to get Shirou to relax and have fun since he told her that he doesn't really do anything for fun. Her plan works until Shirou's survivor's guilt rears its ugly head and we get a deeper understanding of Shirou's character out of it.
Come to think of it, one could argue that this comes to a head with the sex scene near the end. Shirou doesn't want to have sex with Tohsaka because it's the pragmatic thing to do that'll be basically the only way to increase their odds of victory but because it's something he wants to do that'll make him happy but only if doing it would also make Tohsaka happy. For the first time in UBW and arguably even the Fate route, Shirou's is doing something for his own happiness rather than because doing so will help people or make him better at helping people and he's not being bogged down with his survivor's guilt and the thought of "I don't deserve to be happy."
Yet another reason to hate the Realta Nua replacements, I guess.

I'm asking this mainly because the rules on what determine a Phantom seem to be much more nebulous than Heroic Spirits and I don't remember if there was anything like a cutoff date for Phantoms.

I remember hearing that artists and such have a kind of opt out clause, meaning Michelangelo never became one because he didn't want to. I forget where that came up though.
