They were apparently tacked on though which is why the anime usually changes the rituals in someway.

Also, it's worth noting that the Realta Nua (an Updated Re-release for the PS 2 that added some new CGs, voice acting, and a few other things) version replaces all sex scenes with alternate scenes. Personally, I find the original scenes to actually be better since the second Fate scene completely kills the emotional development and the UBW one is just retarded (can't comment on the HF ones since I still haven't read it). The first Fate one is kinda cool, though.

I have a hard time believing that Assassin is really dead. It's just way to early in the story for that, but we'll see.

If the Master dies, the Servant has a limited amount of time to either find a new Master or some other way to sustain themselves. How much time depends on several factors.
If the Servant dies, so long as the Master has Command Seals, they're still in the War. In theory, they could find a Master-less Servant and be back in the game. A Servant-less Master can, however, remove themselves from the War by taking refuge in the Overseer's church (at least in theory). A Master is also removed from the War (technically) if they use all of their Command Seals but that's more of a formality than a hard rule.

Of course, even if he wasn't, nothing I know of states that you have to be a Master in order to use the Holy Grail. Theoretically speaking, once the Lesser Grail been made manifest and is powered, anyone could use it as far as I know.

Anyway, Masters are the most obvious weak point, so it's pretty standard to try targeting them.
Most of the FSN endings are pretty happy and bittersweet at worst.
I could comment on more of what you've been saying but I'd prefer to avoid bringing up spoilers, though this thread has been pretty loose with them so far.
Edit: Consider the war to be over when all but one Servant is dead. It's not technically accurate but it's what you should keep in mind. The winner is the person who gets the grail, which is not necessarily the person who has the last Servant left.

Thanks for the explanations. I think at this point I'll try to just watch the series instead of asking infinite numbers of questions, which I've annoyed at least one thread in the past by doing lol.

Just for the record, if anyone has questions about an English translation of Type-Moon works (visual novels, light novels, video games, etc.), you should check the Beast's Lair forum, because they're the ones who do the vast majority of the work on this kind of thing for the Nasuverse.

Don't worry too much about asking questions because the Nasuverse is very complicated and a lot of info is buried in guidebooks that never got an official English translation.

When a servant dies they go back to the grail to fuel so eventually every servant must go back so the grail can be fully charged.
I think there are exceptions though.
@Arha the fight scenes are pretty fun & especially any scene involving Gilgamesh or Iskandar.
