Any other Tropers love to cook? I thought it'd be nice if we had a place to chat, share recipes, brainstorm emergency substitutes, and rant about how our damn soufflés won't rise.

I specialize in Italian cooking myself. Growing up in my Italian, secret family recipe laden household, it would be impossible not to.

I had to learn to cook and kitchen prepare as self-defense. My dad, who was a trained commis-chef when he was younger, never bothered trying to teach me how to cook. It was one of the things I never forgave him for.

Meanwhile I don't have many good recipes, but I find the combination of tinned pink salmon, tinned crabmeat and some mayonnaise makes some really tasty sandwiches.

I'm a vegetarian, so I guess that limits me a bit, but not so much that I don't have a ton to experiment with.

I do a ton of experimenting with pasta. I recently hit a gold mine, with eggplant and melted Fontina cheese on ziti. It was delicious.

My mother, my sister and I made ox-tail soup. Also, I wish I could make some Schupfnudeln, potato dumplings and clarified butter. (My mother and I made pierogi using ricotta cheese and spinach as a filling, however.)

[up] So you know how to cook German food? I've never cooked anything German in my entire life, but I'd like to learn how!

I Googled Schupfnudeln, and read that it was similar to Italian gnocchi. Do you have any thoughts on that?

My mum's a vegetarian; she's always had quiches and stuff while the rest of the family shared something with meat in it.

Anyway, speaking of my mum, my Mother's Day cake's complete!

My recipe (going from memory) is:

  • 225g butter/margarine/baking block, allowed to soften at room temperature
  • 225g self raising flour (or plain flour sifted with 3 teaspoons of baking powder)
  • 225g caster sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 500ml of double/heavy cream (that's about 1 cup)
  • Icing/powdered sugar
  • A jam of your choice.
  • Berries of your choice (optional) - strawberries are traditional, but blueberries and raspberries are also good.

  1. Grease two 7 or 8 inch baking tins and put a circle of baking parchment on the base of each
  2. Preheat the oven to 180 degrees C (160 for a fan oven, 356 degrees Fahrenheit)
  3. Cream the butter or whatever with a wooden spoon until smooth, then add the caster sugar.
  4. Beat the butter and sugar until both are thoroughly mixed and creamy. Add the first egg.
  5. Beat the egg in, then do the same with the second. Add a few spoons full of flour with the third and fourth.
  6. Beat in the remaining flour along with the vanilla extract.
  7. Divide the batter between the tins equally and place in the oven.
  8. Bake for 30 minutes until the centre of each sponge springs up when pressed - don't open the door for the first 20 minutes for any reason, anyone who tries must be tackled and restrained at once!
  9. Turn the sponges onto a cooling rack and let them cool completely before beginning the next stage.
  10. Whisk the cream in a large bowl (by hand or with a mechanical whisk; either's fine) until soft peaks form. Add half a tsp of vanilla extract and up to 2 spoonfuls of icing sugar just as it's beginning to get stiff, if you wish.
  11. Spread the jam over the top of one sponge, then spread or pipe a layer of the cream over it. Add berries if you like. Spread jam over the bottom of the other half and place it on top (the cream should support it).
  12. Use a sieve to dust the top of the cake with icing sugar (you can even use a stencil, if you like) and decorate the cake with the remaining cream an berries as you see fit.

I'm making macaroni and cheese today, but next week I'm going back to experimenting. I turn into a Mad Scientist when I experiment with food, complete with crazy laughter.

I've got a special dinner prepared for tonight, as it's the season premiere of Once Upon a Time. For some reason, it's always "coat and jacket" weather in Storybrooke, but never summer. :S So I decided to warm things up with some good Greek food. ;P

[up][up] @Cailleach: I never really thought about the similarities between the two dishes. Besides, I had home economics (which consisted of cooking and sewing, if I recall well) during my time in, I think, middle school. I really should get my cooking muscles out of their rusty state.

So this was the dinner I cooked up for tonight.

  • Grilled lamb shoulder blades
  • French fries
  • Greek salad
  • Octopus
  • Red wine

Don't know if you folks will find this icky or not, but here's what I'm making for tonight's dinner:

500 grams turkey breast mince

jar of mushroom pasta sauce - approx 500 grams

box of chopped tomatoes with chili - approx 300 grams

tin of anchovies - small, about 100 grams

oops edit - half a tube of tomato puree.

Combined together in microwaveable dish and left to marinade for about half an hour and then microwaved for twenty minutes to start cooking, and maybe another 15 or 20 minutes to finish.

Served with tagliatelli pasta and some grated hard cheese to taste.

The anchovies give the resultant pasta sauce a nice kick, without overpowering the rest of the ingredients. I've had it before and it works really well with beef mince also.

I use a microwave oven for convenience - it takes less time to cook stuff to an acceptable standard - and cost - they work out far cheaper to cook a meal than conventional ovens powered by either electricity or gas, meaning I have a microwave instead of one of those.

Anyway, had the meal I described earlier and it was lovely. You can cook the same thing in a crock pot, slow cooker or in a casserole and it would work out as well, I think.

I haven't made anything cool in awhile. But I have gotten some good results with my Hastily Made 5 Minutes Before I Have to Leave School Lunches. This black bean wrap was amazing. Prep time under five minutes:

  • 1 can black beans, drained
  • 1 tbsp tahini
  • 1/8 cup olive oil
  • 1 tsp lemon juice
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
(All can be estimated. You're in a hurry, remember?)
  • Pita or tortilla

Steps:

  • Mash black beans with your bare hands
  • Mix in everything else
  • Spread on pita/tortilla and wrap
  • Run before the bus leaves without you!

Since a good 3/4 of my posts on the Troper Updates thread are about food, I figured I should start posting here again instead.

Over the night a farmer's market sprung up across the street from my my apartment, so I stopped by and got all the ingredients for ratatouille. This covers lunch and dinner for today. And hopefully breakfast tomorrow tongue

Not really a recipe as such, just something I felt like trying out.

A pound and a half of "cooking bacon" - which is basically rejects from when they're making rashers, but still hella tasty.

In a three liter microwaveable container I added together:

Two sachets of microwaveable rice and veggies, decanted into the cooking container.

Tin of plum peeled tomatoes.

Tin of chopped tomatoes.

Tin of tomato puree.

Tin of anchovies (I like the taste - plus it gives the sauce a nice kick provided you don't marinade it for too long)

Jar of mushroom pasta sauce.

Cooked for around twenty minutes to get things started, then stirred thoroughly and back in the microwave for another ten minutes. Turned out delicious, and made enough for three main meals without the need for added accompaniments. I liked it so much I'm making it again during the week. Maybe add some chopped fresh or frozen mushrooms and some garlic.

My grandpa becomes 80 soon and I'm gonna make his birthday cake. He loves chocolate so I'm thinking to make him a good chocolate cake (thinking about the one from the Nerdy Nummies cookbook) with ganache(any recomendations? Most of the family don't like white chocolate), and mirror glaze. Now I love baking but there's still much I don't know. Every time I see someone online make mirror glaze, the cream is always white. Does it have to be white to work? I'm also thinking of using this recipe, but I want it to be shiny, like a piano. Any ideas? Thanks ^^
