But with Vegeta, it was 100% about fighting him again; Goku even openly acknowledges that he is being completely selfish in doing it, but he really wanted a chance to beat Vegeta on his own. There was never anything merciful about it.
He does the same thing with Dr. Gero; when the topic of ganking him before he can make the Androids is brought up, Vegeta objects because it would deprive him of the opportunity to fight them, and Goku agrees with that logic.
That said, it's also a Vegeta move. While Vegeta has a Combat Pragmatist streak to him, being entirely willing to cheat to win, he does get drunk on his own pride and allow his foes to increase their strength so he can rub it in their face when it's not enough. Notably, he does this against Zarbon and Frieza's First Form.
I would say that Vegeta does it more than Goku, whose only major incident of allowing a foe to power up that I can think of was Frieza, and he had every reason to be confident about that one; Goku can sense ki levels and Frieza was so kind as to provide a running percentage tally of how much strength he was using throughout the fight, so Goku could estimate for himself what Frieza's maximum was and whether it'd be enough.
Goku's not really that merciful and tends to be a Blood Knight to the extent of Honor Before Reason more often than is really advisable, but dumbf*ckedly helping a foe get stronger before fighting him really is more in Vegeta's wheelhouse.

Weren't most of these decided by a vote? In any case, I presume they don't want to make the videos super long - the regular episodes already clock in at around an hour.
Besides, there are plenty of shows that they do genuinely like, as well as shows that they're more split on, and some of their opinions have even improved in between episodes. They certainly don't act like everything they're watching is garbage.

The anime they watch was voted on by people interested in the channel (and I think Kirran, Kaiser, and Ben were allowed to pick one they were personally interested in and wanted to watch. Kirran made it pretty clear he chose for them to watch Kino's Journey when they were talking about it).
The poll was even linked to in this thread. I don't doubt people meme'd shows like Black Clover and King's Game for them to watch.

Given how much of it exists, "Try every anime" seems like a pretty wild expectation in the first place. <.< That's a weird criticism.
It's like saying, "This critic didn't play every single video game, both indie and AAA, that came out this year before making his Top Ten List!"

My fav part is how in the first cell games fight cell stomps Goku and then Gohan comes to stomp cell even harder than he did to his father

Why not do videos over multiple weeks? I mean because of this they are missing out on the actual gems this season like Girl's Last Tour and possibly like any of the actual comedy shows this season since they didn't bother to try a single one. Hell the Dragon Ball references in Animegataris should have gotten a little attention from them.
I'm confused, what do you mean, exactly? I mean, what they're doing here is taking a list of anime and following them on a weekly basis, so they are doing videos over the course of the next several weeks.
The roster was decided based on online poll, as well as a small selection of stuff they were personally interested in. I suppose there might be flaws in that set-up, but if they want to talk about stuff that they know their audience is interested in hearing them talk about, then that's probably the best way to do it.
And let's be honest, they do have lives, as well as jobs that require more than watching anime - there's only so much anime they can watch a week. Some stuff is unfortunately going to slip through the cracks.

Sticking to melee rush moves is their best option at this point. I disagree with them about Warp Kamehameha being bad. It's clear that Cell just had an Afterimage set up in advance.
