Interestingly enough, speaking of Jedi robes, there's actually nothing in the OT that indicates Jedi had robes as an actual uniform - those could have easily been Obi-Wan and Yoda's scraggly old hermit outfits and nothing else.

By the same token though there's nothing to indicate they aren't. Considering their warrior monk style, it's hardly a stretch to think the Jedi made drab robes their thing.

My personal canon is that the Jedi robes were actually a mark of false humility, in the vein of "Look how ascetically I live, with these drab robes...in this fabulously well-appointed temple/palace, being on personal terms with the leader of the Galaxy..."
A truly humble person wouldn't be like, 'WHO?! WHO DOESN'T WANT TO WEAR THE RRRROBE?!'
