Because "Bearguy III, the Gunpla Slayer" is a nice title for her Gunpla.
All three of the main mecha seem to be scratch builds inspired by a particular canon mecha, rather than actually being based on a given kit like the first season's mecha were.

As far as Anime goes, I think so. There have been a few manga with a female main character, IIRC. I could be wrong, though.
It seems that the dude with the Burning is front and centre in all the advertising, so she's probably an important secondary character rather than the protagonist.

As for whether there have been previous female protagonists in Gundam... not really. Turn A Gundam's Loran was originally pitched as a girl, but that got nixed by Executive Meddling (which is why he spends so much time in drag), but that's as close as we've gotten.
